BETWEEN SEA AND STONE
Syracuse, Plemmirio and the Valley of Panalica
For those who choose to explore Sicily in a mindful and regenerative way, Syracuse represents the ideal starting point: a city where time slows down, matter becomes light, and every encounter is a story.

From Ancient Greece: Syracuse
Siracusa is a city that you don't just pass through: you live it. Every step through the streets of Ortigia tells a story of light, sea, and memory. This is where an itinerary begins that speaks of authentic Sicily, of that part of the island that still preserves a natural rhythm, made of slowness, beauty, and silence.
The island of Ortigia is a small world suspended between water and stone. Its narrow streets of light limestone open onto hidden courtyards and Baroque loggias reflected in the Ionian Sea. In the morning, the scents of the Ortigia Market fill the air with notes of citrus, fresh fish, and spices; a sensory experience that tells of the deep bond between the city and its sea.

The Plemmirio Reserve
From here, the route stretches southward, towards the Plemmirio Marine Reserve. The journey, short but full of charm, leads to a primordial landscape where nature still prevails. The white cliffs plunge into transparent waters, and the Mediterranean scrub – thyme, mastic, wild capers – scents the salty air. It is a place that invites contemplation: you can walk along the paths that run along the sea, stop to watch the flight of seagulls, or simply remain in silence gazing at the horizon.

Taste Ortigia
This itinerary is designed for those seeking a free and personal experience, far from fast tourism. Here there are no mandatory routes or guided activities, but travel ideas that arise from the desire to discover Sicily through encounters with the territory.
Those who wish can stop for lunch or dinner at one of the seaside restaurants, but we recommend staying away from the crowds and heading back towards the city to eat at La Lisca – Cucina e Bottega, partner of Tre di Oro, where artisanal agricultural pasta meets fresh local fish in simple and authentic dishes.
BETWEEN HISTORY AND NATURE
Noto and the Vendicari Reserve
The itinerary between Noto and Vendicari is a journey into the luminous heart of Sicily: between stone and sea, art and silence, beauty and respect. A free route for those who want to be guided by curiosity and rediscover an authentic way of traveling.

Noto, the golden city
The journey begins among the orderly and majestic streets of Noto, the capital of Sicilian Baroque and a UNESCO World Heritage Site. Walking along Corso Vittorio Emanuele, the limestone glows with golden reflections, while the domes and carved balconies tell a story of rebirth and beauty.
Every detail, from the staircases to the railings, seems designed to capture the light. The Cathedral of San Nicolo, with its discreet majesty, dominates the urban landscape and invites silent contemplation.
Noto is a city to be experienced at a slow pace: among artisan workshops, small galleries, and historic bars where time seems to have stood still. Those who wish to discover the most authentic side can venture towards the higher neighborhoods, where tourism fades and the daily life of the inhabitants resurfaces.

Towards the Vendicari Reserve
From Noto, the route continues south, through fields of almond trees, olive trees, and prickly pears. After a few kilometers, the landscape opens up and gives way to the breath of the sea: this is the Vendicari Oriented Nature Reserve, one of the most precious coastal areas in Sicily.
Vendicari is a place suspended between water and sky. Its marshes, a refuge for flamingos and herons, change color with the seasons. The paths cross sand dunes and ancient salt pans, leading to the Vendicari Tonnara, a silent witness to the area's maritime history. Walking here means rediscovering a direct relationship with nature: every step is accompanied by the song of birds, the sound of the wind, the scent of thyme and salt. No guides or predetermined routes are needed—just let yourself be guided by your senses and curiosity.
The beaches, including Calamosche and San Lorenzo, are among the most beautiful in Sicily: bays of light sand set between rocks and Mediterranean vegetation. Ideal for those who love the sea but also seek silence, respect, and contemplation.

Tasty stops and meeting places
Along the road connecting Noto and Vendicari, there are rural bagli and restored farmhouses, places where time has left a gentle mark. Here you can stop for a simple and genuine lunch, based on local products: legumes, oil from the Iblei Mountains, cheeses, and seasonal vegetables.
Some of these establishments host small artisan workshops, others preserve the charm of inner courtyards and old stone mills. Noto and Vendicari represent two souls of the same Sicily: the first sculpted by man, the second shaped by the wind and the sea. This itinerary is not a guide but an invitation to slow discovery: a way to travel in harmony with the places, respecting their pace and voices.
BETWEEN HILLS AND COMMUNITY
Modica and the Iblean countryside
Among the hills and scents of the Iblean countryside, Modica reveals the most intimate face of Sicily: a land that lets itself be discovered slowly, among flavors, landscapes, and people who still believe in the beauty of things done well.

Modica, the city of chocolate and stones
Built on two valleys that meet, Modica is a city that climbs between alleys and stairs, with golden stone houses clinging to the hills.
Walking through its historic center means crossing centuries of history: from Baroque churches, such as San Giorgio and San Pietro, to noble palaces that hide secret courtyards and ancient loggias. But Modica is also scent and flavor. Its artisanal chocolate, cold-processed according to a method inherited from the Aztecs, is a sensory experience that tells of the meeting between distant worlds: a rough, pure taste, free of vanilla or cocoa butter, that smells of sugar and cocoa.
Those who love small details can lose themselves among the shops in the center, where chocolate is accompanied by honey, preserves, almonds, and ancient grains. It is in these places that Sicily shows its truest side, made of slow gestures and hands that work with respect.

Between fields and rural tradition
Leaving the historic center behind, the road winds through silent countryside. The dry stone walls divide plots of land cultivated with ancient methods: wheat, legumes, olives, and carobs. This is where the most intimate part of the journey begins, the one that invites you to listen to the landscape.
In the countryside between Modica and Scicli, you can discover an agricultural world in transformation, where young producers and farming families carry on tradition with new perspectives.
Many of them practice agriculture that respects the land, attentive to natural cycles and biodiversity. Some produce small batches of honey, wine, or oil; others preserve mills, oil presses, or historic ovens, reactivated after years of silence.
This is the land that gives life to Tre di Oro products. It will be an opportunity to get to know the philosophy of regenerative agriculture up close and understand how the land can once again become a space for community.

Cuisine and conviviality
The Modica countryside is an invitation to sharing. Days can end with a convivial dinner in the countryside, prepared with local ingredients and ancient grain pasta, or with a visit to one of the small taverns in the historic center, where rural tradition becomes a gastronomic tale.
The dishes are simple but profound: legumes, wild herbs, sun-dried tomatoes, ricotta, oil from the Iblei Mountains. Every bite is a declaration of love for the land and its generosity.
In the summer months, there is no shortage of cultural events, tastings, and farmers' markets, places where producers and travelers meet to share experiences, recipes, and stories of sustainability.
