Tre di Oro was born from the curiosity to see if an abandoned land could come back to life by cultivating wheat.
From that simple experiment, a project has grown ever larger, which today combines regenerative agriculture, widespread hospitality, and genuine products born in the heart of Val di Noto, in Sicily.
The initial idea has turned into a vision: to tell the story of authentic Sicily, enhancing its traditions and innovating with respect for the land and those who live on it.

FROM FIELD TO TABLE
From grain to flour
Our Russello wheat is cleaned with air and water systems, to remove impurities and preserve the natural aroma of the grain.
The slow milling with natural stone takes place at low temperatures, after washing the wheat, in order to keep nutrients, fibers, and aromas alive. This produces a semolina with a golden color and authentic taste, balanced between strength, lightness, and high digestibility.



ARTISANALLY MADE PASTA
From Flour to Pasta
Our semolina is processed into artisan pasta, bronze-drawn and slowly dried at low temperature.
This method preserves the flavor and aroma intact, giving Tre di Oro pasta a rough and porous surface, perfect for holding sauces and delivering a full and natural taste experience.



FROM FIELD TO TABLE
From Olives to Oil
Our olives, Tonda Iblea, Nocellara and Verdese, are hand-picked and milled within a few hours of harvesting, through cold pressing processes that preserve the fruit's aromatic and nutritional heritage.
This is how a certified organic extra virgin olive oil is born, with a grassy aroma and a balanced taste, a pure expression of the Iblean territory.
Continuous supply chain
Tre di Oro works in close connection with the Val di Noto community.
All processes, from cultivation to transformation, up to labeling, take place near our lands, involving local artisans, producers, and professionals. In this way, every purchase helps support a vibrant rural economy, based on collaboration, dignified and fair work, and the enhancement of local skills.
